Did you ever play Shadow of Mordor? You can ride 'caragores' which is like riding a were-beast. So really maybe what you're asking for a new, better kind of mount (in your fantasy games example) that actually feels different vs. You're on a live, huge animal and I think games actually already take a lot of that away in the translation, turning them into somewhat temperamental motorbikes. It's why new riders aren't constantly galloping their horses across open countryside- a lot can go wrong with uneven footing and wildlife surprises.
